There is something homey in the smell and taste of fried eggs. As much as I love egg salad sandwich, but I always lean my choice toward fried egg sandwich.
Aint’t nothing better sometimes to treat yourself with a beautiful and delicious egg breakfast sandwich.

There is something homey in the smell and taste of fried eggs. As much as I love egg salad sandwich, but I always lean my choice toward fried egg sandwich. Because after the first bite I feel comfort and happiness. Just like when you were a kid and mom fried an egg for you the way you like it, put in on toasted bread and you immediately dig in.

<img class="aligncenter size-full wp-image-25289" src="https://thepuretaste.com/wp-content/uploads/2018/06/breakfast-egg-sandwich-recipe-5-560x824.jpg" alt="This breakfast egg sandwich recipe is healthy, easy to make and a delightful option to make for breakfast or brunch.
I went a step further and fancied it up with the Dijon mustard and roasted red peppers. From simple egg sandwich, it went to café style sandwich.

The sandwich is made with only five ingredients, but those ingredients are complimenting each other. The slightly crusty on the outside and soft on the inside bun. Your favorite melted cheese with marinated roasted peppers. The runny egg yolks soaked into the top of the bread. All of this is a pure breakfast pleasure.

And it only takes about 15 minutes to make. Don’t have 15 min during busy mornings, fine, make it as a special weekend breakfast or even better as a brunch sandwich. I also made it many times for lunch and enjoyed it as well.

<img class="aligncenter size-full wp-image-25295" src="https://thepuretaste.com/wp-content/uploads/2018/06/breakfast-egg-sandwich-recipe-4-560x829.jpg" alt="This breakfast egg sandwich recipe is healthy, easy to make and a delightful option to make for breakfast or brunch.
Most of the time you have all ingredients for this sandwich except for one – roasted peppers. But maybe roasted peppers is something you can’t live without, and you always have it in your fridge?! Then you can stop reading and make this breakfast egg sandwich recipe. But if you don’t have it, I encourage you to make homemade roasted bell pepper. Yesterday I created the post about How to make oven roasted peppers and marinate them. Make it once, and you will have plenty of healthy breakfast sandwiches to make. It is also OK to use store-bought roasted peppers. They will be slightly soggy, so make sure to drain it well.

Now you know how to make egg sandwich and how easy and healthy it is. As always the best food is the simplest food. This healthy egg sandwich will make your day a little more comforting and happier.

Happy Cooking 😉

But proper breakfast is a MUST to start the day right. I want to share with you a perfect, not to mention healthy, breakfast solution for hectic busy mornings that we all have – homemade granola! But not just regular granola but unusual, interesting, cold seasons, homemade coffee granola with winter spices.

<img class="alignleft wp-image-946" src="https://thepuretaste.com/wp-content/uploads/2016/09/homemade-coffee-granola-with-winter-spices-2-560x840.jpg" alt="Homemade coffee granola with winter spices is the perfect way to start your day.
The colder days are coming, and this coffee granola is perfect for chilly, especially rainy days. You wake up early in the morning, prep the bowl the way you like it with the fresh milk or your favorite yogurt, sit at your favorite spot in your home cuddled up in a cozy blanket, and the time slows down for a while. The sourness of the yogurt combined with the sweetness of the maple syrup and honey, warming ginger, cinnamon, and nutmeg, the gentle crunch of the granola, the soothing aroma of the winter spices, the coffee notes all in your morning bowl.

<img class="aligncenter size-full wp-image-954" src="https://thepuretaste.com/wp-content/uploads/2016/09/homemade-coffee-granola-with-winter-spices-10-560x840.jpg" alt="Homemade coffee granola with winter spices is the perfect way to start your day.
I like to add half of the sliced banana to it. It’s like eating a piece of banana bread with the coffee but more of a healthy option. Try it and you will see what I’m talking about. Sometimes I even eat this coffee granola straight from a jar as a pre-lunch snack. Usually, I do this when my husband is not around not to look too desperately hungry.

Now let’s talk about the benefits of making your homemade granola and eating it for breakfast.

Let’s start with how delicious and satisfying it is. It is packed with fiber from the oats, omega-3 and unsaturated fat from the nuts and all the healthy benefits from the winter spices like ginger, cinnamon, cardamom, and nutmeg. Such breakfast will nourish and energize you for hours.

Homemade granola is a lot cheaper than the store bought, at least half cheaper sometimes even more. It has much less sugar which you can adjust to your liking and needs. And if you don’t like a specific ingredient, you can always substitute or omit it. You don’t need to be a kitchen pro to make it. And it only requires 10 minutes to prep it. Faster than going to a local grocery store. And to all, you only need 2 minutes to make your morning bowl.

This recipe will feed one person for up to a week. About 5-7 days of a peaceful, healthy breakfasts! It can be stored it the airtight container (the mason jar is perfect for it) for up to 2 weeks. If it gets a bit soggy see tips and trick how to bring back that crunchiness. But in my experience, it never lasted this long. One week and the whole process starts over again. I could recommend you to make a double batch, but I prefer the fresh granola, and it’s hard to resist not to fill your kitchen with the coffee and spices’ aroma.

I promise the day you make it will lift your spirit. The aroma that fills the kitchen while it’s baking is magical. The house smells like a cup of coffee accompanied with the fresh slice of gingerbread. I like to leave the oven door ajar when finished baking it to fill the room with more aromas.

So there you have a nutritious and effortless way to start your day. It’s a simple, versatile, nourishing breakfast option. And remember it only took you 2 minutes to make yourself breakfast. The minute you dig in into your morning bowl will make the whole day better and calmer.

Coffee Granola Recipe Tips and Tricks:

Make sure all the dry mixture is coated well with the wet mixture.

Do not over bake your granola and don’t bake it on high heat, 300-350 F is the perfect spot.

Don’t overcrowd the baking tray. Otherwise, the granola will be soggy, and we want the perfect crunch.

If you find your granola softened refresh it by crisping it in a pre-heated oven (325 F) for 5-8 minutes, then cool and store.

My favorite place to shop for fresh, fragrant and top quality spices is Mountain Rose Herbs.

Winter spices: ginger, cinnamon, nutmeg and cardamom. You can add other warming winter spices like cloves, allspice, anise stars.

My husband is my main food critic and a tough judge. If he doesn’t like what I made, he simply refuses to eat it. No matter how big of a speech I create about all the health benefits, or how wonderful this recipe is, or this recipe is recommended by a famous chef, food nutritionist, etc. This stuff does not work on him. He will have a couple of bites just to confirm his first opinion but then will trash the rest.

I don’t even know where to start how healthy smoothies are, green smoothies, particularly. I will do my best in this post to explain why green smoothies are good for your health and will share my favorite healthy green smoothie recipe.

Smoothies (especially green ones) was one of the hardest foods to convince him to try. Just the idea of greens in smoothies made him stand firm with not liking it. So before introducing him the concept of green smoothies, I did my homework and prepped some articles from nutritionists and doctors on health benefits of green smoothies. He agreed to try 🙏😁. I made some green smoothies from the internet, but they all went into the disposal by him. He couldn’t stand the strong leafy greens’ smell and taste (don’t blame him on this one).

I finally decided to ditch all the recipes and create my own to balance all the flavors so it will be not only beneficial for the health but also pleasant to drink. This is how I created my healthy green smoothie recipe, that quickly became one of my favorite. It has the proper amount of greens, no bitter taste; it has the sweetness and delight aroma from pineapples and bananas, creaminess from avocado and a hint of ginger. And of course, this smoothie is approved by my husband 👍. He is not only finishing it all the time but also not protesting on me making it often 😋!

<img class="aligncenter size-full wp-image-756" src="https://thepuretaste.com/wp-content/uploads/2016/07/Healthy-green-smoothie-5-560x840.jpg" alt="Healthy Green Smoothie recipe with a sweet pineapple and bananas.
It’s not a secret how green smoothies are beneficial for our health. My husband changed his mind and joined the force of green smoothies’ fans so hopefully, it will be a little easier to convince you 😉.

Let’s start with a short list of health benefits of Green Smoothies:

Improve your digestion.

Increase energy.

Increase mental clarity and focus.

Natural weight loss.

Excellent source of minerals and vitamins.

Full of antioxidants.

Increase Fiber

Improve skin condition.

<img class="aligncenter size-full wp-image-758" src="https://thepuretaste.com/wp-content/uploads/2016/07/Healthy-green-smoothie-7-560x840.jpg" alt="Healthy Green Smoothie recipe with a sweet pineapple and bananas.
Now let’s talk about the ingredients:

The first and the main ingredient is spinach. I tried a lot of leafy greens and found that spinach works best in smoothies. It has the softer texture, less of a green bitter taste and smell, available all year round. You can always experiment with your favorite greens, though.

Why leafy greens are so beneficial in smoothies? Blending greens break down the cells of plants, what improves digestibility and maximizes the delivery of all nutrients to your body. Think how long you chew the portion of a salad, 1 minute? Blender breaks the whole portion down in 30 seconds, and your body will get much more nutrients from it. This is probably one of the most important things about green smoothies.

Spinach: vitamin K, vitamin A, manganese, folate, magnesium, iron, copper, vitamin B2, vitamin B6, vitamin E, calcium, vitamin C, potassium, fiber, vitamin B11, phosphorus, zinc, protein, choline, omega-3 fats.

Banana: vitamin B6, manganese, vitamin C, potassium, fiber, copper, biotin, Magnesium.

Pineapple: vitamin C, manganese, copper, vitamin B6, vitamin B11, fiber, folate, pantothenic acid.

Avocado: Vitamin K, Folate, Vitamin C, Vitamin B5, Vitamin B6, Vitamin E.

Ginger: Anti-Inflammatory effects, may lower cholesterol levels, immune boosting, may reduce muscle pain and soreness, can help treat chronic indigestion.

It’s basically a multivitamin for your body, and what’s even better, you know every single ingredient that goes into your body!

The ingredients can be fresh or frozen. If it is a pineapple season, then why not cut a fresh juicy pineapple and add it to your smoothie? If the fresh baby spinach arrived at your local grocery store or a farm stand, then why not to consume all the fresh vitamins and minerals from it? Of course, the fresher your ingredients are, the more benefits you can get from them. But frozen ingredients work just fine. We all know it is too much work to get a fresh pineapple every time you want to make a smoothie!

If you still have doubts, then consider the time it takes from the beginning to the end of making this green smoothie. It will take you about 5-7 minutes to make the smoothie and about 3 minutes to clean the blender. I make smoothies regularly and didn’t like the hassle of cleaning the blender every single time. Here comes a great 34-second video on how to Make Your Blender Clean Itself. For a deeper cleaning (which I recommend occasionally doing) read this article on How to Clean a Blender with video instructions. Learn it once and all the cleaning hassle will go away.

You can make and drink green smoothies any time of the day and any season. Just limit it to a one glass per day. I prefer to drink it in the morning or before lunch as a little pick me up snack. It gives me an incredible amount of energy and very light but satisfying feel in my stomach. For me, it’s a perfect start of the day. No matter what kind of the day it will be your body is prepped, energized and ready for all the challenges and excitements the day has ahead of you.

Cheers for a healthy mind and body 💕!

Tips and Tricks for Healthy Green Smoothie:

Ginger: I used to buy the fresh ginger root, use it a couple of times, then it wrinkles, loses the flavor, and it is time to throw it away. Follow these storage techniques and you will always have fresh, flavorful ginger:

Fresh unpeeled ginger root -> in a ziplock, air pushed out -> in a crisper drawer -> can be stored for up to two months.

Fresh unpeeled ginger root -> in a ziplock, air pushed out -> in a freezer -> can be stored for up to 6 months. When needed simply use a grater and grate the desired amount.

Liquid options you can use: carton unsweetened almond or coconut milk, unsweetened coconut water or plain water.

For sweeter smoothies consider the natural sweeteners: honey, agave or maple syrup.
